Avocado and Bean Salsa
Prep time: 15 minutes Makes: 12 (½ cup servings) Combine all ingredients and serve with chips.
Ingredients
- 1 (15.25-ounce) can Weis Quality From the Field White Sweet Shoepeg Corn, drained and rinsed
- 1/4 fresh squeezed lemon or lime juice
- 2 ripe Hass Avocados, pitted and scooped from the shell, diced
- 1 (15.5-ounce) can Weis Quality From the Field Tomatoes and Diced Chilies, reserve half of the juice
- 1/2 tsp chili powder
- 1 Tbsp Cumin
- 1 Tbsp Weis Quality Pure Extra Virgin Olive Oil
- 1/2 Onion, chopped
- 2 cloves garlic, finely chopped
- 1 Red Bell Pepper, chopped
- 1 (15.5-ounce) can Weis Quality From the Field Black Beans, drained and rinsed
