Black Bean Pineapple Salad

Ingredients

  • 1 (15 oz.) can Bush;s Black Beans, drained and rinsed
  • Salt and Pepper, to taste
  • 6 Green Onions, thinly sliced (optional)
  • 1 Small Jalapeno Pepper, seeded and minced
  • 1 tbsp Weis Quality Extra Virgin Olive Oil
  • 1 Fresh Lime, squeezed to yield 1/4 cup juice
  • 1/4 cup Fresh Cilantro, chopped
  • 1 cup Sweet Red Bell Pepper, diced
  • 1 (20 oz.) can Weis Qualty From the Field Pineapple Chunks, 2 cups drained and diced
  • Suggestion: Serve with baked tortilla chips

Instructions

  1. Combine all ingredients in a bowl.
  2. Garnish with green onions, if desired.
  3. Serve as a side dish or as a dip with baked tortilla chips.
