Chicken Gyro with Tzatziki

Ingredients

  • 1/2 medium cucumber, peeled, seeded and finely chopped
  • 2 tsp. Fresh Lemon Juice
  • Chicken Gyro
  • 1 tsp. Weis Quality Extra Virgin Olive Oil
  • 1 Clove Garlic, minced
  • 1/2 tsp. Weis Quality Dried Oregano
  • 2 (4-5 ounce) chicken breasts, cubed
  • salt and freshly ground pepper to taste
  • 1 cup Romaine Lettuce, chopped
  • 1 medium tomato, chopped
  • 1/3 cup red onion, thinly sliced
  • 4 Atie's Bakery Wheat Pitas
  • 1/2 cup Athenos Reduced-Fat Feta Cheese
  • Tzatziki Sauce
  • 3/4 cup Yoplait Greek Plain Yogurt
  • 1 clove garlic, minced

Instructions

  1. Simmer olive oil, garlic, oregano, salt and pepper in a small heavy saucepan over medium heat until fragrant; about 2 minutes.
  2. Add chicken to the pan and cook until browned and juices run clear, about 8-10 minutes.
  3. Remove chicken from heat and set aside.
  4. Meanwhile, combine all ingredients for tzatziki sauce in a small bowl.
  5. Stir gently to blend and set aside.
  6. Warm pitas in a dry skillet over medium heat for 2-3 minutes and, without slicing, fill each pita with 1/4 of ingredients.
  7. Fold pita in half and serve with sauce.
