Ingredients
- 2 (14.5-ounce) cans Weis Quality Reduced Sodium Chicken Broth
- 1(15-ounce) can Weis Quality Authentic Green Chili Enchilada Sauce
- 1 (15.5-ounce) can Weis Quality Black Beans, drained and rinsed
- 2 (14.5-ounce) cans no salt added diced tomatoes
- 2 Tbsp. fresh jalapeño peppers, chopped
- 1-1/2 tsp. Ground Cumin
- 1 tsp. Weis Quality Chili Powder
- 1 whole Wonder Chicken, skin removed; diced into bite-sized chunks (about 6 cups)
- 1(16-ounce) bag frozen Weis Quality Tiny Sweet Corn, thawed
- 1/2 cup Fresh Cilantro, chopped
Instructions
1. Combine first 7 ingredients in a large stockpot.
2. Cook over medium heat until mixture begins to simmer.
3. Reduce heat to medium-low. Add chicken and corn.
4. Simmer for 15 minutes, stirring occasionally.
5. Add cilantro and stir. Simmer for another 5 minutes and serve.
