Chicken Tortilla Soup

Ingredients

  • 2 (14.5-ounce) cans Weis Quality Reduced Sodium Chicken Broth
  • 1(15-ounce) can Weis Quality Authentic Green Chili Enchilada Sauce
  • 1 (15.5-ounce) can Weis Quality Black Beans, drained and rinsed
  • 2 (14.5-ounce) cans no salt added diced tomatoes
  • 2 Tbsp. fresh jalapeño peppers, chopped
  • 1-1/2 tsp. Ground Cumin
  • 1 tsp. Weis Quality Chili Powder
  • 1 whole Wonder Chicken, skin removed; diced into bite-sized chunks (about 6 cups)
  • 1(16-ounce) bag frozen Weis Quality Tiny Sweet Corn, thawed
  • 1/2 cup Fresh Cilantro, chopped

Instructions

1. Combine first 7 ingredients in a large stockpot.

2. Cook over medium heat until mixture begins to simmer.

3. Reduce heat to medium-low. Add chicken and corn.

4. Simmer for 15 minutes, stirring occasionally.

5. Add cilantro and stir. Simmer for another 5 minutes and serve.
