Fiber-ful Yogurt-Bran Muffins

Ingredients

  • 1 1/4 tsp Baking Soda
  • 1/3 cup Brown Sugar, packed
  • 1 1/2 cups All-Purpose Flour
  • 3 (4 oz. each) conta Yoplait Yo-Plus Yogurt
  • 1/4 cup Weis Quality Vegetable Oil
  • 1/4 cup Weis Quality Quick Eggs
  • 1 cup Kellogg's All-Bran Original Cereal
  • 1/3 tsp Salt
  • 1/2 cup Fresh Raspberries or Blueberries

Instructions

  1. Preheat oven to 400'F.
  2. Place paper baking cup in each of 12 regular-size muffin cups.
  3. Pour cereal into resealable food-storage plastic bag, seal and crush with rolling pin.
  4. Stir together the egg substitute, oil, and yogurt.
  5. Add cereal, flour, brown sugar, baking soda, and salt until ingredients are moistened.
  6. Gently stir in berries.
  7. Divide batter evenly among muffin cubs, filling each ¾ full.
  8. Bake 18-20 minutes, or until golden brown; immediately remove from pan.
