Fish Soft Tacos with Tropical Salsa

Ingredients

  • 1 tsp Weis Quality Chili Powder
  • Salt, to taste
  • 1/2 cups Weis Quality Shredded 2% Mexican 4 Cheese
  • 1 lb Tilapia Fillets
  • 2 Green Onions, thinly sliced (tops only)
  • 1 Small Jalapeno Pepper, sliced and minced
  • 1 tbsp Fresh (or 1 tsp. dried) Cilantro, chopped
  • 1/4 cup Red Bell Pepper, minced
  • 2 Large Ripe Mangoes, peeled, pitted, and chopped
  • 2 cups Shredded Red Cabbage
  • 8 Mission Life Balance Whole Wheat Tortillas, warmed

Instructions

  1. Preheat oven to 425'F.
  2. Combine mango, red bell pepper, cilantro, lime juice, jalapeno, and onions in a medium bowl; set aside.
  3. Place tilapia fillets on 2 large sheets of parchment paper.
  4. Combine dry seasonings in a small bowl and sprinkle over tilapia.
  5. Bring edges of parchment paper together, fold twice and tuck under to enclose fish and place on a baking sheet.
  6. Bake for 15-18 minutes. Unwrap fish.
  7. Place equal amounts of tilapia onto each tortilla and top with cabbage, cheese and mango salsa and fold in half.
