Fish Soft Tacos with Tropical Salsa

Ingredients
- 1 tsp Weis Quality Chili Powder
- 1/2 cups Weis Quality Shredded 2% Mexican 4 Cheese
- 2 Green Onions, thinly sliced (tops only)
- 1 Small Jalapeno Pepper, sliced and minced
- 1 tbsp Fresh (or 1 tsp. dried) Cilantro, chopped
- 1/4 cup Red Bell Pepper, minced
- 2 Large Ripe Mangoes, peeled, pitted, and chopped
- 2 cups Shredded Red Cabbage
- 8 Mission Life Balance Whole Wheat Tortillas, warmed
Instructions

Preheat oven to 425'F.

Combine mango, red bell pepper, cilantro, lime juice, jalapeno, and onions in a medium bowl; set aside.

Place tilapia fillets on 2 large sheets of parchment paper.

Combine dry seasonings in a small bowl and sprinkle over tilapia.

Bring edges of parchment paper together, fold twice and tuck under to enclose fish and place on a baking sheet.

Bake for 15-18 minutes. Unwrap fish.

Place equal amounts of tilapia onto each tortilla and top with cabbage, cheese and mango salsa and fold in half.
