Ingredients
- 4 Roma tomatoes, peeled
- 1 Medium cucumber, quartered
- 1 yellow or sweet bell pepper, seeded and quartered
- 4 small sweet onion, peeled and quartered
- 2 cloves garlic, peeled and minced
- 3 cups Weis Quality 100% Tomato Juice
- 1/4 cup Weis Quality Extra Virgin Olive Oil
- 8 cup Pompein Pomegranate Infused Red Wine Vinegar
- 1/4 tsp. Weis Quality Pure Ground Black Pepper
- 10 plain Greek yogurt, divided
- 4 tsp. chives, chopped
Instructions
Process each vegetable separately in a food process until coarsely chopped. Transfer to a large bowl. Add garlic, tomato juice, oil, vinegar and black pepper. Cover and chill for at least 30 minutes. Garnish with a dollop of plain Greek yogurt and chives. Serve.
