Ginger Peachy Chicken

Ingredients

  • 2 tbsp Weis Quality Butter
  • 1 Fresh Lemon, thinly sliced
  • 1 lb PA Boneless, Skinless Chicken Breast
  • Salt and Black Pepper, to taste
  • 2 tbsp Aurora Crystallized Ginger, chopped
  • 1 (15.25 oz.) can Weis Quality Lite Sliced Peaches in Pear Juice

Instructions

  1. Season chicken with salt and pepper, as desired.
  2. In large, nonstick skillet over medium heat, melt butter.
  3. Add chicken breasts and sauté 6 to 8 minutes per side or until golden brown.
  4. Top with lemon slices. Add peaches (with juice) and ginger.
  5. Cover and simmer over medium heat for 10 minutes or until a thermometer inserted into the center of a chicken breast reads 170 ºF.
  6. Baste frequently with juices during cooking.
  7. *Tip: If crystallized ginger is unavailable, substitute 1 1/2 teaspoons ground ginger.
  8. Serving Suggestion: Serve with Organic Olivia salad and Marzetti salad dressing.
