Grilled Chicken with Peach Relish

Grill time: 10-12 minutes

Ingredients
- 1 jalapeno pepper, seeded and finely chopped
- 1/8 tsp. ground red pepper
- 1 Tbsp. more fresh lime juice
- Chicken ----------------------------------
- 2 Tbsp. reduced sodium teriyaki sauce
- 1 1/2 Tbsp. Weis Quality Honey
- 4 4-ounce boneless and skinless chicken breasts (salmon, shrimp, tilapia, or pork could also be used)
- Peach Relish ----------------------------------
- 2 cups fresh Moonlight peaches (about 2 medium), peeled and diced
- 1/2 cup red onion, finely chopped
- 1/2 cup red bell pepper, finely chopped
- 2 Tbsp. Fresh Cilantro, chopped
Instructions

Preheat grill to medium-heat and coat with cooking spray.

Combine teriyaki sauce, first tablespoon of lime juice, and honey in a shallow dish.

Add chicken and let stand.

Meanwhile, combine peaches and the next seven ingredients in a small bowl for the relish and set aside.

Remove chicken from marinade (discarding marinade) and place on grill rack to cook, uncovered, for 3 to 5 minutes on each side or until juices run clear and minimum internal temperature reaches 165 degrees fahrenheit.

Remove chicken from grill, garnish with peach relish.
