Grilled Chicken with Peach Relish

Ingredients

  • 1 jalapeno pepper, seeded and finely chopped
  • 1/8 tsp. ground red pepper
  • 1 Tbsp. more fresh lime juice
  • 1 garlic clove, minced
  • Chicken ----------------------------------
  • 2 Tbsp. reduced sodium teriyaki sauce
  • 1 Tbsp. Fresh Lime Juice
  • 1 1/2 Tbsp. Weis Quality Honey
  • 4 4-ounce boneless and skinless chicken breasts (salmon, shrimp, tilapia, or pork could also be used)
  • Peach Relish ----------------------------------
  • 2 cups fresh Moonlight peaches (about 2 medium), peeled and diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup red bell pepper, finely chopped
  • 2 Tbsp. Fresh Cilantro, chopped

Instructions

  1. Preheat grill to medium-heat and coat with cooking spray.
  2. Combine teriyaki sauce, first tablespoon of lime juice, and honey in a shallow dish.
  3. Add chicken and let stand.
  4. Meanwhile, combine peaches and the next seven ingredients in a small bowl for the relish and set aside.
  5. Remove chicken from marinade (discarding marinade) and place on grill rack to cook, uncovered, for 3 to 5 minutes on each side or until juices run clear and minimum internal temperature reaches 165 degrees fahrenheit.
  6. Remove chicken from grill, garnish with peach relish.
