- 6 Weis Five-Star Omega-3 Eggs
- 1/2 cup Weis Quality 1% Milk
- 1/4 tsp. Weis Quality Salt
- 1/8 tsp. Weis Quality Black Pepper
- 1 cup Weis Quality Made with 2% Milk Shredded Cheddar Cheese
- 3/4 cup zucchini, chopped
- 1/4 cup Red Bell Pepper, chopped
- 2 Tbsp. red onion, chopped
Instructions
Preheat oven to 350°F. Spray 12-cup muffin tin with nonstick cooking spray. Beat eggs, milk, salt and pepper in medium bowl
until blended. Add cheese, zucchini, bell pepper and onion; mix well. Spoon mixture evenly into muffin cups, about ¼ cup
each. Bake in 350°F oven until just set, 20 to 22 minutes. Cool on rack 5 minutes. Remove from muffin tin; serve warm.
