Mushroom & Cheese Quesadilla

Ingredients

  • Weis Quality Non-Stick Olive Oil Cooking Spray
  • 1 tsp. Weis Quality Pure Olive Oil
  • 1/4 cup Onion, chopped
  • 1 tsp. garlic, minced
  • 1 (8-ounce) package Weis Quality Sliced Baby Bella Mushrooms
  • 1 (12-ounce) package Morningstar Farms Meal Starters Crumbles
  • 1 tsp. Weis Quality Chili Powder
  • 1 tsp. ground cayenne pepper
  • 1 Tbsp. Fresh Lime Juice
  • salt and black pepper to taste
  • 12 La Tortilla Factory Smart and Delicious Soft Wraps Minis, any variety
  • 2/3 cup Weis Quality Made with 2% Milk Mexican Fancy Shredded Cheese
  • 1/2 cup salsa (optional garnish)

Instructions

1. Preheat oven to 375°F.

2. Spray a large baking sheet with nonstick spray; set aside.

3. Heat olive oil in a sauté pan over medium-high heat.

4. Saute mushrooms until browned.

5. Add onions, garlic and Morningstar® Meal Starters™ Crumbles and stir to combine until onions and garlic are tender and mixture is cooked through.

6. Season with chili powder, cayenne pepper, lime juice and salt and pepper to taste.

7. Remove from heat.

8. Place 1 tortilla on a flat work surface and spoon about one-third cup of mushroom mixture on top.

9. Sprinkle with 1 tablespoon of cheese.

10. Top with another tortilla and arrange on a baking sheet.

11. Repeat with remaining ingredients.

12. Bake 15-20 minutes, or until browned and cheese is melted.

13. Slice each quesadilla into quarters and serve with salsa if desired.
