Ingredients
- Weis Quality Non-Stick Olive Oil Cooking Spray
- 3/4 cup Weis Five-Star Panko Bread Crumbs
- 2 tsp. Mrs. Dash Original Blend
- 1/8 tsp. Weis Quality Ground Black Pepper
- 1/4 cup shelled and finely chopped pistachios
- 2 large Weis Quality Eggs
- 1 lb. Weis Quality All Natural Skinless/Boneless Chicken Breasts, pounded to 1/4-inch thickness
- 6 cups Organicgirl Supergreens!
Instructions
1. Pre-heat oven to 350°F.
2. Spray a baking sheet with non-stick cooking spray; set aside.
3. In a medium bowl, combine panko bread crumbs, seasoning blend,black pepper and pistachios.
4. Dredge chicken into beaten egg, then pistachio mixture and place on baking sheet.
5. Repeat until all 4 chicken breasts have been crusted.
6. Lightly spray each chicken breast with non-stick cooking spray and bake 20-25 minutes until crust has browned and internal temperature of chicken has reached 165°F at the thickest part.
7. Serve on a bed of mixed greens
