Potato Salad with Dijon Vinaigrette

Ingredients

  • 1/4 cup red bell pepper, diced
  • 1 1/2 lb. package Blue Denim Steamables Red Potatoes, cooked and diced
  • 2 tsp. Weis Quality Sugar
  • 4 Tbsp. white wine vinegar
  • 1/4 cup shallot, finely diced
  • 2 Tbsp. country Dijon mustard
  • 2 Tbsp. Crisco Puritan Canola Oil Omega-3 DHA
  • 1 cup Mann's Broccoli Wokley, chopped
  • 1/4 cup yellow bell pepper, diced

Instructions

  1. Cook potatoes according to package instructions
  2. Cool thoroughly before handling
  3. Meanwhile, whisk sugar and vinegar in a medium bowl until sugar is dissolved.
  4. Add shallot and mustard to mixture; stir well.
  5. Add oil in a slow stream; whisk thoroghly and set aside.
  6. Combine potatoes, broccoli, and bell peppers in a large bowl; toss gently with dressing
  7. Refrigerate for at least one hour before serving.
