Potato Salad with Dijon Vinaigrette

Ingredients
- 1/4 cup red bell pepper, diced
- 1 1/2 lb. package Blue Denim Steamables Red Potatoes, cooked and diced
- 2 tsp. Weis Quality Sugar
- 4 Tbsp. white wine vinegar
- 1/4 cup shallot, finely diced
- 2 Tbsp. country Dijon mustard
- 2 Tbsp. Crisco Puritan Canola Oil Omega-3 DHA
- 1 cup Mann's Broccoli Wokley, chopped
- 1/4 cup yellow bell pepper, diced
Instructions

Cook potatoes according to package instructions

Cool thoroughly before handling

Meanwhile, whisk sugar and vinegar in a medium bowl until sugar is dissolved.

Add shallot and mustard to mixture; stir well.

Add oil in a slow stream; whisk thoroghly and set aside.

Combine potatoes, broccoli, and bell peppers in a large bowl; toss gently with dressing

Refrigerate for at least one hour before serving.
