Pumpkin Cider Bread

Ingredients

  • 1/2 cup Weis Quality From the Field Pumpkin
  • 2 1/2 cups Whole Wheat Flour
  • 2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 2 Eggs, beaten
  • 1/2 cup Weis Quality From the Field Unsweetened Applesauce
  • 1/4 cup Splenda No-Calorie Sweetener Granular
  • 1/2 cup Apple Cider
  • Weis Pure Canola Oil Spray

Instructions

  1. Preheat oven to 350'F.
  2. In a medium bowl, combine whole-wheat flour, baking powder, cinnamon, Splenda, and nutmeg.
  3. In a large bowl, combine the remaining ingredients.
  4. Add the dry ingredients slowly to the wet and mix until blended. Do not over mix.
  5. Pour the batter into a greased 9-inch loaf pan and bake for 40 minutes.
  6. Test doneness by inserting a toothpick into the center of the bread. Bread is done when toothpick comes out clean.
