Quinoa Pilaf

Ingredients

  • 1 Clove Garlic, minced
  • 1 tsp Weis Quality Pure Olive Oil
  • 1 Medium Carrot, chopped
  • 1 cup EDEN Organic Red Quinoa
  • 1 (14.5 oz.) can Weis Quality Reduced Sodium Chicken Broth
  • 1/4 tsp Salt
  • 1 Medium Onion, chopped
  • 1/4 cup Water

Instructions

  1. Heat oil in a small saucepan over medium heat.
  2. Add onion and garlic, cook for 2 minutes.
  3. Add carrot, cook 2 minutes longer.
  4. Stir in the broth, water, and salt, until boiling.
  5. Add quinoa, returning to a boil.
  6. Reduce heat. Cover and simmer for 12-15 minutes or until liquid is absorbed.
  7. Let stand for 5 minutes.
  8. Fluff with a fork and serve.
