Quinoa Pilaf
Prep Time: 30 minutes
Makes: 4, ¾ cup servings

Ingredients
- 1 tsp Weis Quality Pure Olive Oil
- 1 cup EDEN Organic Red Quinoa
- 1 (14.5 oz.) can Weis Quality Reduced Sodium Chicken Broth
Instructions

Heat oil in a small saucepan over medium heat.

Add onion and garlic, cook for 2 minutes.

Add carrot, cook 2 minutes longer.

Stir in the broth, water, and salt, until boiling.

Add quinoa, returning to a boil.

Reduce heat. Cover and simmer for 12-15 minutes or until liquid is absorbed.

Let stand for 5 minutes.

Fluff with a fork and serve.
