Rosemary & Garlic Rubbed Pork Loin

Ingredients

  • 1 tsp Weis Quality Salt
  • 2 Cloves Fresh Garlic, crushed
  • 2 tbsp Fresh Rosemary, finely chopped
  • 1 tbsp Weis Quality Extra Virgin Olive Oil
  • 1-2 lb Boneless Pork Loin Roast, trimmed
  • 2 (15.25 oz.) cans Suggestion: Serve with Weis Quality Crisp 'n Sweet Corn
  • 1 (24 oz.) jar Suggestion: Serve with Musselman's Applesauce, any variety
  • 1/2 tsp Weis Quality Black Pepper, coarsely ground
  • 1 (7.2 oz.) box Suggestion: Serve with Betty Crocker Potatoes

Instructions

  1. Pre-heat oven to 350 °F.
  2. Pat pork dry with paper towel.
  3. Coat roast evenly with oil.
  4. Combine all seasonings and rub onto all surfaces of the roast.
  5. Place pork roast in a shallow pan.
  6. Roast uncovered in the middle of pre-heated oven.
  7. Roast for about 20 minutes per pound, or until internal temperature reaches 155º F.
  8. Remove roast from oven. Allow roast to rest 10 minutes before slicing and serving.
  9. Serving Suggestion: Serve with roasted garlic mashed potatoes, sweet corn and applesauce.
