Sesame Ginger Salmon

Ingredients

  • 4 sheets Weis Quality Aluminum Foil
  • 4 (5-ounce) fresh True North Salmon® fillets
  • 1 (16-ounce) bag Weis Quality Mandarin Blend Vegetables
  • 1/2 cup Weis Quality Light Sesame Ginger Vinaigrette Dressing
  • 2 cups jasmine or white rice, cooked
  • 2 tsp. toasted sesame seeds
  • (optional garnish)

Instructions

Preheat the oven to 400°F. Spray 4 sheets of foil, large enough to fold over and seal, with nonstick cooking spray. Place 1 cup of vegetables on foil sheet. Place salmon fillet on vegetables, skinside down. Drizzle 2 tablespoons of dressing over salmon and vegetables. Fold the foil in towards the center of the salmon, covering it completely. Fold the ends in to close the packet and seal. Place sealed foil packet on a large, heavy baking sheet. Repeat until all salmon fillets have been wrapped. Bake for about 20-25 minutes or until salmon is cooked through and flakes easily with a fork. Serve over cooked rice and garnish with toasted sesame seeds if desired.
