Slow Cooker Stuffed Peppers
Prep time: 20 minutes | Cook time: 4 hours on HIGH setting | Makes: 8 (1/2 pepper) servings
Ingredients

- 1.25 lb. Weis Quality Ground Turkey Breast
- 1 cup onion
- 1 tsp. The Spice Hunter® Granulated Garlic
- ¼ tsp. Ground Black Pepper
- 1 Tbsp. The Spice Hunter® Chef’s Shake
- 8.8 ounce Weis Quality Whole Grain Brown Fast Rice
- ½ cup Weis Quality Plain Breadcrumbs
- 1 Large Weis Quality Egg
- 4 large bell peppers
- 28 ounce can Furmanos® Crushed Tomatoes with Roasted Garlic and Olive Oil
- ½ cup Swanson® Natural Goodness™ Chicken Broth
- 1 Tbsp. Weis Quality Granulated Sugar
- 1 tsp. The Spice Hunter® Chef’s Shake Seasoning Blend
- ¼ cup Weis Quality Grated Parmesan Cheese (optional)
Instructions
1. In a medium bowl, combine first 8 ingredients and mix evenly.
2. Stuff each pepper half with one-eighth of the turkey mixture and set aside.
3. In a medium bowl, combine tomatoes, broth, sugar and seasoning blend; pour over the bottom of a 6-quart slow cooker stoneware.
4. Place 4 prepared pepper halves over sauce and layer 4 remaining peppers on top.
5. Cover with remaining sauce.
6. Cook on HIGH heat for 4 hours, or until the internal temperature of the stuffed peppers reaches 165°F.
7. Sprinkle with grated cheese before serving.
