Spinach Cranberry Salad with Pomegranate Vinaigrette

Ingredients

  • 6 Tbsp. crumbled blue or gorgonzola cheese
  • 1/8 tsp. Weis Quality Salt
  • 1 tsp. Ground Ginger
  • 1 (6 ounce) package Weis Quality Baby Spinach
  • 1/3 cup sliced almonds
  • 1/3 cup dried cranberries
  • 2 Ripe Pears, cored and thinly sliced
  • 1/3 cup Weis Quality Pure Olive Oil
  • 1/3 cup Weis Five-Star Pomegranate Juice
  • 1 Tbsp. Weis Quality Sugar
  • 1 tsp. Weis Quality Ground Cinnamon

Instructions

COMBINE all vinaigrette ingredients in small bowl and WHISK until well blended.

Just before serving, TOSS greens with pears, cranberries, walnuts and blue cheese in large bowl. DRIZZLE with Pomegranate Vinaigrette. TOSS lightly to serve.
