Tuna & White Bean Salad

Ingredients

  • 4 leaves leafy red lettuce
  • 1 Garlic clove, crushed
  • 1 Tbsp. Lemon Juice
  • 2 Tbsp. Weis Quality Pure Olive Oil
  • 2 (2.6 ounce) pouches StarKist Flavor Fresh Pouch Low Sodium Chunk Light or Albacore White Tuna
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, diced
  • 2 Tbsp. fresh basil leaves, chopped
  • 1 can (16 oz.) Weis Quality Cannellini Beans, drained and rinsed
  • 1-2 tsp. salt-free lemon pepper seasoning
  • Salt and Pepper, to taste

Instructions

In a medium bowl, combine garlic and lemon juice and slowly whisk in olive oil. Add tuna, red bell pepper, onion, basil, beans and lemon pepper seasoning; mix gently to combine. Season with salt and pepper to taste. Arrange lettuce over large platter. Spoon tuna mixture into lettuce leaves and serve.
