Beth Stark, RDN, LDN
I oversee the growing Weis Dietitian team and lead the creation of health and wellness programs that educate our shoppers on how to make nutritious food choices. What truly drives me in this role is being able to positively influence others to help them prevent chronic diseases, feel well and live their best life. We reach millions of Weis shoppers with our nutrition messages each year so I strive to make them timely, practical and achievable. In the kitchen, I often stretch recipes with quinoa, rice, veggies or beans to get extra servings out of them or I prepare double batches so there will be quick lunch and dinner options available all week long.
In my down time I love to travel and be active outside with my husband, one-year old daughter and two pups.
Kathryn Long, RDN, LDN
As a dietitian at Weis Markets, I truly appreciate the opportunity I have to work on specialty wellness initiatives and connect with shoppers through our Ask a Weis Dietitian service, store tours, cooking demos and media opportunities. I like to translate the latest nutrition science and research into easily understandable information in order to help individuals make better choices for themselves and their families. A healthy eating routine needs to be one that you can maintain for a lifetime and that includes sweets and treats! I truly live by the phrase “Everything in moderation.”
In my spare time I enjoy doing art projects with my nieces and watching hockey.

Our team of in-store dietitians is available right where you shop to guide you to the best food choices for you and your family. In select stores, they offer a monthly schedule of FREE health and wellness events such as nutrition workshops, tasting events, personalized nutrition consultations/shopping, cooking demos, Cart Smart™ tours, and even health screenings in the Pharmacy.

Erin Dunleavy, MS, RDN, LDN
I enjoy bringing awareness to healthful foods and teaching people that eating healthfully can be fun and taste good too! Practicing mindful eating while savoring all foods is a useful skill that everyone should adopt. Overall, the best approach to maintaining a long-term healthy diet is to ditch the quick-fix fad diets and find an eating pattern that includes healthful foods you enjoy.
When I’m not promoting healthful eating to the community, I enjoy exploring new places with my husband, spending time outdoors, and tackling the latest home improvement project.
Emily Crawford, RDN, LDN
I have a passion for providing individualized nutrition expertise to customers and our community. Food is a powerful tool that has the capability of helping you feel your best, most energized self. As a Dietitian and in life, my motto is keep it simple, live mindfully, and stay active.
Outside of work, I love spending quality time with family, exercising, cooking, watching movies, and visiting new breweries!
Taylor Simpson, MS, RDN, LDN
I love providing customers with the nutrition know-how needed to adopt a healthy lifestyle. I believe that nutritious daily food choices can help prevent chronic disease and assist in managing these conditions. I am passionate about food and nutrition and enjoy sharing this passion with my customers and the surrounding community. I think that learning to prepare healthful home cooked meals and snacks is a great lifestyle habit to meet your nutrition goals.
In my spare time I enjoy cooking, baking, and traveling!
Robin Klein, RDN, CSP, LDN
To me, there is no greater gift than helping others live their healthiest and happiest lives. It is my true passion to provide my customers with the tools they need to make long-term health related behavior changes. Working at Weis allows me the opportunity to help people make sustainable and practical choices every day; from trying new recipes to learning how to have a more balanced approach to health and wellness. I believe that there is no “one-size-fits-all” approach to eating and living, and I enjoy working with customers to help each individual and family find what works best for them, to reach their highest level of wellness.
In my spare time, I enjoy spending time with my husband, going to pure barre classes, and cooking/baking.
Kimberly Asman, RD
As a Weis Markets in-store dietitian, I love having the ability to connect with our customers to teach them about healthful and delicious food choices. Whether it’s through one-on-one counseling, store tours or group presentations, I aim to serve as a reliable source of nutrition information. My goal is to help customers discover foods that nourish their mind and body, while shifting their thoughts of food as a stressor to something that they can enjoy. Realizing that one way of eating does not fit all and learning to appreciate one’s body can help everyone to find a balanced approach to food.
In my spare time, I like to teach group fitness classes and play with my cat, Gingerbread.

Lyndi Wieand, RDN, LDN
I enjoy being able to provide customers and the community with ideas and tools to make better food choices when shopping in our stores. Such improved choices lead to a healthy home and, in turn, a happy and healthy lifestyle. I believe that food is medicine and nourishing your body with healthful foods is essential for the prevention and management of chronic diseases. My personal food philosophy is that there is a place for treats among an overall balanced and nutritious approach to eating.
Outside of work, I enjoy traveling with my family and friends, supporting local businesses, cooking, and being active outside.
